RECETA:  Fideuá.

Ingredients:

400grs. fideos (very small pasta).
1 fish stock cube.
300grs. fillet of white fish.
350grs. cuttlefish or squid.
1 onion.
200grs. tomatoes.
Paprika.
3 cloves of garlic.
1 cup of cooking oil.
A few sprigs of parsley.
Saffron (Azafrán de la Mancha) or Safrante.

Preparation:

1-. Put the cooking oil in a frying pan and heat until it is beginning to smoke, then add the finely chopped onion.

2-. When the onion is golden brown add the cuttlefish or squid cut into small squares and cook for five minutes.

3-. Add the peeled and chopped tomatoes, the paprika and the washed white fish cut into thin strips.

4-. Turn the heat right down and add the pasta and fry very lightly.

5-. Leave until the pasta begins to take colour.

6-. Heat the fish stock and mix in a mortar the garlic cloves, the parsley sprigs with a little of the stock.

7-. Add the mixture directly to the pasta and then add the rest of the fish stock. Season with salt and a couple of pinches of saffron or Safrante.

8-. Allow to gently boil until the pasta is cooked.
