RECETA:  "Home made" chicken.

Ingredients:

1 chicken about 2 Kg.
1 soupspoon of vinegar.
1 head of garlic.
6 soupspoons of olive oil.
Black pepper.
Thyme.
Salt.
Saffron (Azafrán de la Mancha) or Safrante.

Preparation:

1-. Cut the chicken into large pieces and clean them well then place them in a casserole dish.

2-. Roast the head of garlic then peal each clove and add them whole to the chicken in the casserole dish.

3-. Add 5 soupspoons of olive oil to the casserole dish and cook in a medium oven for 10 minutes.

4-. Grind together the pepper, thyme, saffron and salt in a mortar. Add the vinegar and the rest of the olive oil.

5-. Remove the casserole dish from the oven and add the spice vinegar and oil mixture. Return to the oven and cook until the chicken is just cooked.
