RECETA:  Red Mullet with Saffron.

Ingredients:

2 red mullet (or similar fish) per person, well cleaned.
3 glasses of white wine.
150 grs. cooked tomatoes.
1 lemon cut into rings.
3 teaspoons of chopped parsley.
1 pinch of thyme.
2 bay leaves.
Pepper.
Salt.
Saffron (Azafrán de la Mancha) or Safrante.

Preparation:

1-. Lightly grease an oven dish and place the fish side by side facing opposite directions.

2-. Pour over the white wine and add the tomatoes, thyme, bay leaves, salt and pepper.

3-. Grind two pinches of saffron in a mortar with a little wine or simply use Safrante, add to the fish.

4-. In a very hot pre heated oven place the oven dish and leave until the liquid comes to the boil.

5-. Lower the heat and leave to cook for fifteen to twenty minutes.

6-. Once ready to serve, garnish with a few lemon rings.
